Transmit, Adium, TextMate, Growl, Quicksilver, iTerm, MacPorts. But it depends on how you use a computer. I'd personally recommend not installing much of anything for a week or two and just learn about what is native to OS X. It's far more capable than a bare Windows install. - ·[▪_▪]·

Fugu for FTP/SSH. And if all you are doing is quickie image editing, Seashore does the job. Open source. You also want NeoOffice. And I vote to leave Growl OFF... I'm still trying to uninstall it. I have much hate for Growl. - Cyndy
@Cyndy all you have to do to remove a preference pane in OS X is control(right)-click on it's icon in System Preferences and a popup will appear under your cursor that says "remove xxxx pane" and that's it. Skitch for image handling, Filezilla for FTP (if you're coming from Windows, you'll feel more comfortable with it). adium if you like IM, Twhirl for Twitter, Firefox for browsing....that should set you up. I'd recommend trying iWork as well instead of Office, nice package. - Duncan Riley
