I made pierogi for the first time this weekend. The filling was pure win (mashed potato with onion fried in real butter), but my dough was a touch thick for my taste. Do any of you have recommendations for good pierogi dough? Bonus points if it freezes well!

I made them for the twisted potluck I hosted this weekend (where you bring something you or someone else has never had before). Dave had never had a pierogi, I had never made one; it was meant to be.
