So they were good? Did they crumble much in the mail? The gluten keeps the together so i had to do smaller sizes. If you have any suggestions, I am always looking to improve

They were awesome! They came through the mail fine, no crumbling. They do crumble a little when you bite into them, but beyond flourless cake/quickbreads, I think all GF baked stuff does by nature. The size was great, IMO.

Thanks for the feedback; the gluten free oatmeal blueberry one crumbled a bit to after first bite. I don't know what I can do about that, but I'll keep playing

You could add more eggs, RAP, but that would definitely affect the texture.

I wonder if adding a bit of mild shredded cheese to the batter would help keep them from crumbling.

Is casein a problem for those who have gluten issues? It's a different protein from a different source...

Many people who have issues with gluten also have trouble with casein; casein is the protien in milk, but you could go a goat cheese, which cause less issues

Yep! Casein is okie for me. I have minor lactose issues if I go overboard, but they seem to be getting less and less the longer I'm GF. Peanut butter might help, but that'd be a different kind of cookie, then. :D I used to make (gluten) choco chip cookies with walnuts, choco chips and pb chips. I think casein is avoided in those avoiding gluten for neurological reasons vs. intestinal (celiac/GI)?

In my experience they both can influence mental state, but casein in particular seems to amplify emotions (and also creativity)

Then I guess it is a form of support for your dietary restriction, as long as he doesn't support you to much and eat 'em all

I think it's more support for the yumminess of your cookies. A lot of my GF stuff he won't touch - it's either "too healthy" or "missing something... oh yeah, gluten". :D
