Re: The Catholic Foodie, Lent, and NPR - http://catholicfoodie.com/the-cat...
"Mimi, Thanks for the comment! You are right. I did not mention the Easter Vigil, and I am glad that you brought that up. The Easter Vigil was something that we looked forward to every year in the early years of our marriage... and even before we were married. However, it became impractical for us after our third child was born. We started having babies early... came home pregnant from our honeymoon. So, Baby #1 slept right through the first Easter Vigil he attended. Baby #2 was born just a couple of months before our family's second Easter Vigil. That meant that Baby #1was over a year old and pretty much set in his baby ways. Baby #2 was not as docile as Baby #1. That particular Easter Vigil was a struggle. So, when Baby #3 came right before the next Easter Vigil, we decided it would be better for our family to go Mass on Easter morning. And we have been doing that ever since. For the last 5 years, my son has been serving as an altar server, and he has been assigned to the Easter..." - Jeff Young

Re: Crawfish Monica: A Signature Jazz Fest Dish - http://catholicfoodie.com/crawfis...
"Personally, we like Konriko. Not as much salt as the others. Someone told me the other day that there's a guy in LaPlace who is making a "Cajun seasoning" product that has no salt. That's really what I would prefer. I like to add my own salt. There's nothing worse than killing a dish with too much salt. So glad that the Blackened Redfish Magic worked for you!" - Jeff Young
Re: Crawfish Monica: A Signature Jazz Fest Dish - http://catholicfoodie.com/crawfis...
"Awesome! I'm so glad that it turned out deliciously! Jazz Fest is just around the corner, and I have definitely been thinking about Crawfish Monica. As a matter of fact, I boiled crawfish yesterday. I thought I might make Crawfish Monica with any leftovers... But, alas, there were no leftovers. ;-) Bon appetit!" - Jeff Young
