"Wow! Yes, are right! You probably could feed the whole neighborhood with that! I have never tried making a smaller batch, but I have a friend who has. Let me check with him and see if he will share the recipe with me. Thanks for the comment! Aloha!"

"Mimi, Thanks for the comment! You are right. I did not mention the Easter Vigil, and I am glad that you brought that up. The Easter Vigil was something that we looked forward to every year in the early years of our marriage... and even before we were married. "Personally, we like Konriko. Not as much salt as the others. Someone told me the other day that there's a guy in LaPlace who is making a "Cajun seasoning" product that has no salt. That's really what I would prefer. I like to add my own salt. There's nothing worse than killing a dish with too much salt. So glad that the Blackened Redfish Magic worked for you!"

"Awesome! I'm so glad that it turned out deliciously! Jazz Fest is just around the corner, and I have definitely been thinking about Crawfish Monica. As a matter of fact, I boiled crawfish yesterday. I thought I might make Crawfish Monica with any leftovers... But, alas, there were no leftovers. ;-) Bon appetit!"
