Both Contiki and TinyOS have micro TCP/IP implementations (check the work of the 6lowpan IETF group). If you can find some old Tmote Invent nodes there is some demo code in the tinyos CVS repo on SF (tinyos-1.x/contrib/boomerang) showing you how you can sample the microphone.
