"The first way I did potatoes after starting paleo was with your crispy potatoes recipe - so *thank you* for that. I'm now on the higher carb side and having potatoes - white or sweet - pretty much on a daily basis."

"I'm nodding my head in agreement while I read this. My story is exactly the same: started eating "paleo" (geez, can't even write it without the quotes now) about two years now. For the past year I've been expanding my diet more and more: lots of carbs (potatoes! fruit!), dairy (kefir, cheese, yogurt) and even honey on a regular basis - and I've been doing great. I still love the paleo community, the local meet ups and online groups - but this label no longer fits me. And although I still respect Robb Wolf and Mark Sisson's work, I have no idea what paleo even means! Because it's not eating like paleo man did, because they sure weren't having chicken and broccoli. So why this story? I guess stories make it easier for us humans to grasps things like diet - I know it did helped me. For years I tried to "eat healthy" but our mind will just make excuses for buying crappy food ("well, this is just frozen meat and pasta, it can't be that bad") - so an understanding of why certain foods are..."

"Agreed! I wasn't arguing agains't post-workout carbs (or meals) :) My main point was what you said on that first paragraph: it's probably unnecessary for people who don't have a medical condition to save carbs for after workouts and, unfortunately, it's something I still see a lot."

"Well, non-starchy vegetables are low on carbs (and calories), so I don't thing eating only those would put someone out of "low carb" zone. To me, low carb is simply restricting carbs in any way (although I don't say thing as a negative thing). Also, carbs doesn't necessarily means sugar :) Sure, that might bring back some cravings - but probably not potatoes (an awesome source of both carbs and also micronutrients)."

"Once again, awesome post. It perfectly describes where I stand about carbs. Not really something you missed, but I would add that carbs aren't only "post workout" food - it's my biggest gripe about it. Lots of people in this community are adding back more carbs into their diets, but sometimes you still hear some resistance, as if you need "exercise credits" to have potatoes (obviously people should exercise and have an active lifestyle, but I think there's no point worrying about having carbs even if you're not an endurance athlete)."
