I would have thought the process was largely the same but there seems to be a lot less info on this topic online - mind you most of the snail stuff is widely variable as to how you should treat them... a definitive guide would be useful - got any translations from French cook books for me? :) - Daniel Swan
definitive guide? mmm... no... As a lad, I remember collecting snails and letting them fast in a meshed container. I bred them too. Good for snail races and discovering about the sex life of snails. It was fascinating. As for recpes, I reckon you can't go wrong butter / garlic / parsley. My italian cook book also mentions ragu of snails with celeriac (yum) and omelette with snails. - Nicolas Bertrand
