Pancakes are light and fluffy. That's what makes them successful. It's not syrup. That's already been proven by use of whipped cream and fruit. They cannot be done on anything but a griddle. Waffles are a poor substitute because of their reliance on syrup to fill those tiny squares. You should eat pancakes over waffles. Discuss here:

I must take issue with Eric's comment about the syrup. Pancakes are an excuse for syrup, just like lettuce is an excuse for dressing (preferably 1000 island). Don't hate me, though--I make fabulous waffles.

Kathy, I am inclined to agree with you: sausage with pancakes, bacon with eggs and gravy should be made with bacon drippings (not sausage) for gravy and bicuits) That said, during my years of experimenting with a 14 grain rotation diet, I can tell you that pancakes are not *All about* syrup. Indeed, they are about combinations such as Buckwheat pancakes with fresh blueberry syrup or Teff crepes filled with marscapone cheese topped with strawberry preserves, or Apple Barley-oat fluffy pancakes with....

I so very highly approve of all people who can actually cook stuff that I would surely be willing to suffer through an abomination such as blueberry syrup (ahem--it's still syrup, just sayin') in order to get at those buckwheat pancakes. Crepes, I dunno. They seem so fussy, and not at all hearty. However, I would taste test through the pain, oh yes I would.

RE: syrup. I agree, syrup is the point of these things. RE: pancakes vs. waffles. Waffles have little cups for the syrup, hence waffles > pancakes. RE: bacon vs. sausage. I vote BOTH. RE: crepes. With chocolate, for dessert. So waffles + bacon + sausage + chocolate crepes for dessert = PERFECTION.

I do them all, pancakes, crepes, waffles. And they are to be eaten any time of the day. But breakfast is best when its eaten late at night. Even the loneliest Waffle House is a paradise after a long lonely stretch of road. And yes, Blue Corn meal with tapioca flour and a bit of barley flour make very fun (and fluffy) Johnny-Cakes for the kid in us all!
