Yeah, it's based on packaged foods, they list the brands. And I bet different brands have different values and different manufacturing processes. Like organic vs. regular. I guess the point is to be aware of things like this.

The reason why the serving sizes differ is because they're comparing equicaloric portions.

OK, but that's not how most people choose their serving sizes. I still contest the conclusion that equal calories of white pasta and brown pasta yield a greater sugar crash with brown.

I'd also be wary of equating glycemic index directly with the sensation of a sugar crash.

And the way they graphed this, I don't think you can really infer that brown pasta makes you crash more than white pasta does.

Maybe I'm doing it wrong, but I'll choose whole grains and complex carbs over simple carbs every time. I basically consider foods made of simple carbs to be devoid of nutritional content.

It depends on what you need to do. Simple carbs are better for burst activity.
