D, is it "eggy"? Mr. B will eat eggs in things like cake, where you can't tell they're in there, but not in breakfast casseroles, potato salad, etc. where you can tell they are.

No, not at all. It's fairly plain. It's a bit "drier" than a regular griddled pancake, but buttery. I halved this recipe: http://www.thekitchn.com/thekitc... and added a smidgen of vanilla cause I like the flavor it imparts.

Aha! I had one in Holland as pannekoeken and loved it. Never heard them called "Dutch babies" or knew they were so popular here. Excellent. :)

But typically, pannekoeken are not made like an omelet, they are pancakes, just with all sorts of stuff inside or on top.

Yeah, I hadn't seen these until I moved up to Portland area almost 4 years ago. Elmer's used to call them a German pancake, but now they too call them a dutch baby. Cassie made them for dinner a week or so ago.
