Shrimp & Grits, the most famous dish of the South Carolina Lowcountry, is really more of a concept than a particular dish, and there are dozens of variations on the theme. My version is a “re-mix” of the classic ingredients into something that’s elegant enough for a weekend dinner party, but simple enough to make for a weekday family dinner. It can even be prepared ahead to the point where final cooking time is about 15 minutes!

Ground turkey is an excellent, economical ingredient that is far more than just a healthier substitute for beef. In addition to its nutritional benefits (high protein, low fat, low cholesterol) it is flavorful and very versatile. I usually cook up a few pounds at a time and freeze it, then use the cooked, crumbled ground turkey in frittatas, tomato sauces, enchiladas, even curries; ground turkey takes any type of spicing well. Provolone picante is a dry, aged provolone with a very pleasant bite and a texture similar to Asiago (which can also be used in this recipe.) Cipolline onions, those flat little Italian gems, are becoming increasingly popular, both fresh and in jars marinated with Balsamic vinegar. (And when you run out of the onions, the delicious onion-flavored Balsamic makes a memorable dressing for cooked greens)

October’s Free Cookbook Preview… Google Books has been gradually placing the full text of thousands of books online, many of them free full previews of culinary books that are either out-of-print or have been added online with the permission of their publishers. One of the former gems we’ve recently stumbled upon is The White House Cook Book, a 521 page book of interesting recipes edited by Fanny Lemira Gillette which was published in 1889. The book was published towards the end of Grover Cleveland’s first presidency (he would go on to serve 2 non-consecutive terms) and the beginning of Benjamin Harrison’s.
