We had dinner at Tokyo in Hillsboro...service was a little uneven as the sushi took a while to prepare so I watched Cassie eat and then she watched me eat, but I got 2 pieces of hamachi for free. I am now gloriously stuffed.

Fraid not, my fine sonic mixing friend. Hamachi beats toro any day of the week, not to mention that hamachi is much cheaper...besides the answer to fatty tuna (toro) is fatty hamachi! Game, set and match!

I've had otoro that was to die for (though way overpriced), but I agree hamachi is great. It usually makes up about 40% of my order.

I'd take otoro and salmon before hamachi when it comes to raw fish. However, hamachi kama is pure awesome.

Have US sushi chefs stopped putting wasabi on nigiri because it's so common to mix it in the soy sauce here? I've only been to a few places where there is any detectable amount on the sushi (I still refrain from mixing though).

Sake, especially in the Pacific Northwest, is absolutely killer. I always, always order hamachi but I always come away disappointed if there's no otoro or chutoro. But, then again, I always order tomago so, well, y'know.

Only if the otoro/chutoro is very fresh, and the place I go will give me the nod every time (the same with uni). Hamachi, on the other hand, is typically consistent. Unfortunately here in VA there isn't a great opportunity to have really good sake.

I dunno, Akiva, I've found that hamachi is always top notch, but sake is rarely so, even in Seattle. And while I like toro, it's just too expensive for me to ever get, particularly since hamachi is the bomb. About the only time I get toro or fatty hamachi is when I'm eating sushi with my brother, Ben. And I've never tried tomago...it just doesn't strike my fancy. I'll eat uni at a good restaurant. Normally I order a selection of sake, hamachi, tai, halibut (just for the halibut), tobiko, and smelt roe.

Well, of course, it's all a matter of taste, honestly. I can't stand tobiko or roe of any sort, for example, but I'll occasionally get albacore because I appreciate the dryness and a lot of sushi snobs scoff endlessly at albacore. Of course, eating kosher prevents me from eating a good portion of sushi (no unagi, for example) but this can be a good thing (octopus, for example).

But you are too right. Some people like mackerel and it's way too fishy for me (my rule for most sushi is that if it tastes fishy it's of poor quality - sake, hamachi, halibut, etc. never taste fishy if they are good...only mackerel) and some people like maguro, which to me is tasteless...like eating soy/wasabi flavored jello.

I actually had albacore when I originally wrote this thread and it too is good, but there's just something about good yellowtail or salmon nigiri that hits the spot.

I have friends from Japan that use chopsticks to eat nigiri, and put a little wasabi in soy sauce without mixing it in. This allows some wasabi when eating sashimi, but you can avoid most of it when eating nigiri. Are you saying they don't eat the right way?

Before I started eating kosher, unagi was one of my favorites. It brings so much flavor to the party even if it's about as 'un-sushi' as a California Roll.

Slightly off topic, but something that is a delicacy here on the east coast when in season (about 3 weeks in early spring) is shad roe, cooked of course. Yummy stuff if done right.

Chris, I was taught that nigiri is 'finger food' and only rolls and sashimi are eaten with chopsticks. I was also taught that putting wasabi in the soy sauce is an 'insult' to the chef who prepared your sushi. This may not be the right way but most Japanese people I've talked to about it agree that this is how they were taught as well. I have seen people apply wasabi directly to sashimi pieces, though.

BTW, I was hurt that Akiva would assume that I don't know how to eat sushi...deeply hurt. For the record, I bet he dips his nigiri into the soy rice down instead of meat down. And how is using wasabi an insult to the chef, but using soy sauce is not? Definitely some things just don't transition well from one culture to another.

For sashimi, from wikipedia: "Another more correct way to flavor soy sauce with wasabi is to place the wasabi mound into the soy sauce dish and then pour it in. This allows the wasabi to infuse the soy sauce more subtly."

I'm sure I've seen guests on Iron Chef eat nigiri with chopsticks, so I would have to assume that it is acceptable to eat with your fingers but not necessary. Unfortunately for me I'm always a little gauche because I am a left handed chopsticker.

I also find it strange that nigiri is finger food, even though the fish is largely exposed to the fingers, while rolls are not finger food, but have more seaweed to hold.
