Ok, clever friends. Anybody got a recipe for the inside part of a chicken pot pie? This diet won't let me have a crust, but I love the chicken and veggies and think I'd be content to have them alone. Any suggestions?

I use cream of chicken soup and mix it together with cubed chicken and frozen veggies and potatoes. -
I pour a bag of frozen "stew veggies" into a crock pot, pour in a jar of gravy, chop a couple chicken breasts and let it simmer for 8-10 hours on Low. Then I serve it over biscuits (from a tube) -
Yeah, I usually use the frozen mixed vegetables in mine, but my sauce is chicken stock based and seasoned with a crock pot roast seasoning mix. My chicken is the pre-made rotisserie chicken at the store that I shred when I get home.
my filling is like Mary's - frozen mixed veg, cream of chicken soup and a can of chicken breast. -
what Eric mostly: frozen stew veggies, chicken stock, a bit of mushroom soup, and fresh chicken breasts. about 10 mins out, i toss in some freshly chopped parsley, and depending on the veg, some diced tomato, and stir it all together. and frankly, pouring it over TONNES of roasted cauliflower, rapini/spinach/kale, is hella yum. -

Late, but what I do is fry (or reheat) my chicken in butter, add flour (as much as the butter I used) and cook til light brown, add chicken stock and frozen veggies, bring to boil and cook until it's the consistency I want. Salt, pepper and rosemary to taste. -
usually the thickened gravy part has some sort of flour or cornstarch in it, check the label on the canned soup -

LB, I've seen some chicken pot pies that use mashed potatoes as a crust. As I recall, I think you're trying to avoid potatoes, so maybe you could try this with mashed parsnips or cauliflower? -
