Reminds me of the deli counter in grocery store in Scotts Valley across the street from NorCal offices of MetaCreations (the Fractal Design arm of it). Local companies'd go there for lunch daily. PROBLEM: Deli counter pencils (for marking your sandwich menu) disappeared at frightful rate. SOLUTION: Deli affixed pencils with price label. Price: $100.00. Pencils stayed at store. :) - Susan A. Janet - I learned kanji by reading. A lot. Then writing letters and journals for years. I have no formal training but my grammar and skill is of college level (I have a certification called "Kan-ken" - kannji kentei shiken). For someone who is starting from scratch, watch shows in all Japanese to train your ears, and learn to write via workbook. Rodfather - because fermenting was a widely used preservation method when Japan was a really poor country. A lot of the traditions still live on til this day. But I agree. Good point. I only know of crackers trying to make sushi at home - and I'm too scared to try it. Japan could teach America a LOT about customer service. I have often wondered why there was never a Japanese customer experience trainer. From the way you are greeted when you walk in, to the way they fold and present your purchase to you just makes you feel important - whether it's buyin a snack at Mr. Donut or getting a suit. Mona - are there any people who still devote their lives to apprentice-ship for a craft/art in Japan? There were several crafts that I was into for a while that, at one time, were livelihoods passed from generation to generation, but, from what I hear, are not anymore... It's kind of sad to hear that those traditions in original form are dying (but good that there are some devoted gaijin who are trying to keep the spirit alive). Tanabata - that celebrates the spirits of the past. It's in the summer and there are tons of festivals, we get dressed up in yukata (less formal version of kimonos) and watch fireworks. Good times! We get a week off, plus a bonus if you're working, too haha - Mona Nomura
I find it really interesting the focus on details... and the patience involved in what I've heard was the way of traditional apprenticeship. Even with Aikido, O-Sensei's uchi deshi (live-in students) would start out training only taking ukemi (falls) for years before they got to do technique. The idea was that they couldn't learn how to do the techniques until they understood how it felt to receive them. And Temari too... the apprentice would spend years just learning how to prepare the base correctly. - Lindsay is in 20-ten

Lindsay - That's how it goes with everything. Most people don't understand that everything is considered an art and tradition. Even sushi. In order to be a sushi chef, you start off cleaning, washing dishes, before you can learn to wash rice. And from there, cleaning fish, the sharpening knives, etc., It takes YEARS before you stand behind the counter and even then, you are still not allowed to interact with the customers. everything is EARNED not handed to you. - Mona Nomura from IM

Ok, to give a quick synopsis, the stock is everything. I am not sure what is available in Australia, but if there is a Japanese grocer, look for hondashi (instant soup stock) http://www.koamart.com/shop...: and dashi konbu (flat squares of seaweed). I soak the dashi konbu in water over night, then use that as my soup base, combined with the hondashi. I also look for miso that is dashi iri, meaning it has stock too. of the miso soup, without it being too salty. More miso != more flavor. That's also the short cut to making soup stock from scratch. If you're daring enough, the stock from scratch is as follows: 1. dashi konbu 2. niboshi 3. katsuobushi. Instructions: soak the konbu in water overnight in a pot. Had a mentor named Reiko when I was in a biomedical research program (summer thing). She offered once to let me try some of her homemade sushi, but I declined, because the of idea of raw fish. That's when I learned that sushi isn't necessarily raw. It was a great learning experience, but I cringe when I think of how many gaffes I made by not taking time to learn about the culture that raised her. I'll have to disagree. People kept talking to us (gf and I) in Japanese until we were like "No Habla Japanese..." What was funny was a lady that spoke both Chinese and Japanese helped me out when I was trying to buy a ticket to the Osaka Aquarium. My girlfriend (who only speaks English) was amazed as she thought I suddenly gained the ability to speak Japanese as it took her quite a while to figure out I was speaking Chinese instead. @Mona: My real difficulty lies in rote memorization of syllables that mean nothing to me. I guess the first song (Sayonara Solitia) was easy to learn because it doesn't repeat lines. However, In Tsubasa Wa, they change up the words a little bit. @David Adam: Congratulations - and good luck. Japanese is the hardest language to learn. My first recommendation would be to watch shows only in Japanese, no subtitles, to get used to the speech. Once you sense a sort of rhythm to the speech patterns, turn the subs on. But basically, it's all about the listening. Then read. Heaps of reading. - Mona Nomura

To my ignorant mind, in difficulty levels, Korean > Chinese > Japanese. According to my TKD master's wife, Koreans must learn three words for just about everything, and what word you use depends on the listener's age. She gave the example of telling someone dinner was ready and saying "food." Now Chinese has got those tones, so that you could say "ma" five different ways and mean 17 different things. Mona, we do, although I'm not sure that the ingredients are strictly Japanese, for example, sushi in Melbourne nearly always includes avacado (it doesn't in WA).
