I'm a fan of keyboard shortcuts myself... but I think the new label formatting is nice for sure.

Frankie: I agree. This new label formatting is awesome, specially when you can separately choose different colors for each label.

havent you always been able to choose different colors? or are you able to change the color for one specific label without affecting the group now?

I think there was a lab add-on that allowed doing so, and yes, the second option is the right one.
