So again I ask: "what makes a pretzel a pretzel?" This seems just like bread, but with a baking soda glaze. Is the baking soda what gives them the "pretzel" taste?

There's many different ways to make pretzels, but I think what you're referring to is them being dunked, or boiled in water briefly before baking. That water probably has baking soda in it. Katy might know more.

I haven't made pretzels since I was a kid and I was too young to really remember what we did. Having said that, most pretzel recipes I've seen involve dunking the pretzels in boiling water for a bit before baking, like Derrick said. I have had pretzel bread before, so I'm wondering if this recipe is riffing on that idea. Either way, it looks tasty to me.

It always feels like hardware is a few steps behind in it's ability to "interact" while being leaps and bounds ahead in overall technical wizardry. We still haven't seen the next hardware revolution (on the consumer side) in the way that Web Blah Blah might have been considered a "software revolution"
