Just realised that I never tried pancakes. I've always been curious about it but never had the opportunity to taste them. Thanks for sharing, I think I'll have a try.

I think part of it will depend on if you are a heavy syrup user. If you're all about the syrup then the pancakes are just a conveyance system. Tim set out to make good pancakes and after several months of practice this is the recipe he came loves the most. Full fat buttermilk gives the best results.

@Heather I'm Italy. I am pretty sure that US residents here cook pancakes, or even that you cand find them in a bar/shop in a big city like Rome or Milan, it's just that I have never commited myself enough to find them!

I'm using my crock pot for a 2 day cook big and fill the freezer binge. I'm making dishes based on the drastically reduced-price meats (as in, sell date is almost upon us) found at the supermarket yesterday. I'm cooking for one with a 5 qt crock pot, so I do this often. There are always leftovers.
Day 1 (today): I made a curried chicken and vegetable dish. I'm eating some of it this week, so only a few quarts made it to the freezer.

Day 2: I've already prepped the boneless country-style ribs (which I know aren't really ribs) and layered them with onions and honey bbq sauce, and placed the crock in the fridge until the start of tomorrows' 9 hours slow cook. The super family sized pkg was 99 cents per pound. Too much meat for me if I wasn't preparing to freeze massive quantities of it, but just right for this purpose..

What about lentil soup? My uncle turned me on to them, and they're so adaptable to any added spices and ingredients from meat, vegetables, and so on. Love it, and very healthy!

2 cans white beans of your choice, 2 pkgs pesto (plus water & olive oil as directed) - simmer to a mush, spread on thinly sliced, toasted italian bread. Looks dreadful, tastes fantastic. Plus you can add whatever you like, add artichoke? top with Parmigiano-Reggiano?
My Go-To Recipe: 1/2 box pasta, 1-2 pkgs dry pesto (depending on how saucy you like it), cook pesto according to directions, towards the end, add 5 or so sliced Sun Dried Tomatoes (I like the chewy dry ones) and some rotisserie chicken. With pasta, cook asparagus pieces or peas. Combine, eat!
