Help me out - suggest me some inexpensive, easy-to-make meals that I could do say, for dinner one night and have leftovers that I could take to work and eat for lunch the next day (or just make the night before). I've GOT to stop eating out, and most pre-packaged meals that taste like actual food are almost as expensive as eating fast food.
Make a big batch of rice, stick them in some zip-lock sandwich bags, and freeze them. It's so convenient to pop them in the microwave. Dennison's chili to go with them. Or make Golden Curry with some meat and veggies.

Any stir-fry and rice combo heats up well the next day. You could make a massive pile of sandwiches and freeze them, then just grab a couple before you leave for work. You can also freeze muffins and cake. Add a piece of fruit and you're good to go.

homemade chicken fried rice, all crockpot stews, chili. I like to cook big on sunday and then not worry about it, so i collect crockpot cookbooks - I highly recommend this method.

I would suggest fried rice if you are good at cooking rice or have a rice cooker. Or roast a whole chicken, and roast some veggies beside it (or in the same pan, but I've never tried those and can't vouch for them). Chicken is super-affordable when not pre-portioned or boned out, so you can probably afford to splurge on a nice, high-quality one. Or get salad leaves (romaine, arugula, or baby spinach) for when you're too lazy to cook veggies. Frozen peas are great for easy cooking too.

Just recently, I made a super-delicious chicken hash - a bit of leftover chicken, hash browns (I coulda used a potato or two but these needed eating up), diced carrot, celery, and onion, some frozen corn, and some pesto. The skin, I cut up and fried, then microwaved for some crispy cracklings to sprinkle over.

How long does the $20 have to stretch you? The thing about meat at the store is that you basically pay for tenderness and/or butchering, not flavor. So buy whole birds or tougher cuts (of pork or beef) and either do some of the butchering yourself or sear, then braise or slow-cook the tough cuts.

I would definitely look for whatever's on sale. I do that all the time anyways. =) Even when you're flush, it never hurts to be frugal and it also imposes variety - you can't always eat the same thing when different things go on sale.

Make a batch of tuna salad or egg salad. For a less soggy sandwich, pack the salad in a little plastic bowl and take fresh bread along to put it together at lunchtime. Piece of fruit and you're good.

To stretch your $20 as far as possible, buy rice and beans. But don't get the convenience versions of either (ie. not microwavable rice, nor canned beans). Your best bet is to get brown rice (unless you dislike it, some people do), some wild-rice you can mix in for variety, and one or more good dry beans in bulk. Some beans are *extremely* tasty even unseasoned.

Just got back from the store: rice + milk + cereal + noodles (the kind in the bowl that can be microwaved; I caved, but they were only 69c) + OJ + ground beef (not as lean as I'd like, but SUPER cheap) + hamburger buns = $15. Make a steak, roast chicken, grilled boneless skinless chicken breast, or big piece of fish and have with rice and a simple steamed vegetable (or even frozen vegetables) for dinner. We have a fridge and microwave, but the fridge is...uh...not recommended for actual use. The office used to be dominated by a bunch of slobby guys. We've reclaimed the microwave somewhat, but none of us are keen on using the fridge until we can get it replaced. We bring insulated bags with ice packs instead.

In parallel, I always get weird looks too when I'm out with Sarah (or Sarah and Matthew) when at the park. I'm a single full-time Dad to an eleven year old Daughter about half the time, so I can relate to some of the thoughts above. I used to feel weird and uncomfortable hosting play dates and such at our house. We've been at the same school for years now, so it's no longer an issue.
