The Bellini was invented sometime between 1934 and 1948 by Giuseppe Cipriani, founder of Harry's Bar in Venice, Italy. Because of its unique pink color, which reminded Cipriani of the color of the toga of a saint in a painting by 15th-century Venetian artist Giovanni Bellini, he named the drink the Bellini.The Bellini consists of puréed white peaches and Prosecco, an Italian sparkling wine. Marinating fresh peaches in wine is an Italian tradition. The original recipe was made with a bit of raspberry or cherry juice to give the drink a pink glow. Ingredients: • 2 oz Prosecco, Italian sparkling wine from Treviso • 1 oz Campari • Splash of Soda water • Green olive and lemon peel twist Directions: 1. To a glass of ice add Prosecco, Campari and soda water. 2. Garnish with a green olive and lemon peel twist impaled on a short wooden skewer. 3. Enjoy. Though the above recipe uses Prosecco, still white wine can be substituted. Istead of Campari Aperol can be used as well (another Italian aperitif, part of the Camapari group. Campari has not changed since it was first created in Novara, Italy by Gaspare Campari in 1860. From 1904 to 2005, Campari was produced in Sesto San Giovanni from 1904 to 2005 when production was moved to more modern facilities in Novi Ligure. - Ksana

The name of the wine is that of a small community situated to the north of Lecce (Apulia, Italy) in an area of vineyards and olive orchards with scattered farmhouses and ancient watchtowers.
