I don't understand why people think that a character in a movie must be played by the original actor/actress that starred in the role. Simple, useful information about cooking the perfect scrambled egg. I looked this up this morning just to see what else anyone recommended adding to scrambled eggs, as I usually just mixed 'em up and fried 'em - which tastes just fine, frankly. But I tried the Perfect Recipe as listed here (substituting, as usual, coconut oil for butter and almond milk for dairy milk) and I was surprised to find that my mother-in-law simply raved about them, relating them back to the eggs she loved when she was a child in Ukraine. Rob, i think this is a great question and one i've mused on quite a bit. I believe that once an infrastructure is in place that enables people to shift from highly processed to raw or lightly processed foods, the shift will happen incredibly quickly. If that demand actually disappeared, you'd see a lot of companies laying people off - but I think those same people who are laid off would probably regain employment somehow with the local food movement. That would be the "worst" that would happen, and in the future we would probably see a change in the medical industry as well, considering that so much medical-industry labor is a result of the poor food choices we tend to make because of processed foods. Thus, in the long run, it would absolutely better. - Dan Overlander
Zach, my question is definitely a hypothetical in that the change would be instant. What I am mentally processing is how such a change would be felt throughout America, which will highlight how extensive the "food cartel" has infiltrated all aspects of our nation. Big Food would have to follow the market if demand for junk food disappeared. But first they would make every attempt to subvert it, as they have with "organic," "low fat," "low carb," "sugar-free," "fat-free," ad nauseam. Rob although you asked a hypothetical question I think we face a bigger challenge. The food industry and highly processed foods may have reached that point in our present economy that they are considered to big to fail. Cars and banks reached that point leaving us no choice as a nation but to support them. Or so the tell us. Will the companies adapt if the consumers change? they may not need to. - Brett Henderson
Brett, I am taking a different approach with this hypothetical. My intention is to write about how intertwined industrial food, and in particular highly processed foods, are in our society by showing the impact reducing demand will have on our economy, communities, health, etc. Clearly, such a decline will hurt corporations, lobbyists and recipients of their (financial) attention. No one has mentioned the fact that highly processed food is shelf stable. Food that is fresh as a shorter shelf life. There would be a need for people to shop more. More money into the local economy and more jobs closer to home. There would be less need for packaging and companies couldn't do business all over the world. (eg Coca-Cola) - summerkitchen
summerkitchen, I would disagree. Most of the vegetables found in our grocery stores right now are shipped in from all over the world. This is how we get tomatoes in the middle of winter, sweet corn in the spring. As long as its able to be affordably shipped there most likely be food shipped from all corners of the globe. I take issue with the term "highly processed food". Too much generalisation may kill the discussion and what's more, take away the opportunity to improve foods. "No trans fat", "less salt", "More unsaturated fats" are all potentially actionable issues, while "highly processed" is not (unless you are arguing to eat raw food). Is low fat yogurt highly processed? Frozen Spinach? The better people can indicate what the want and don't want, the more likely it is it will actually be offered. - Paul van Eijck

Rob, I also think hypothetically if this were to happen farmers would quickly shift to what is demanded some of this will still be corn, soybeans, and wheat. But if there is more of a demand for other crops then the farmers that have sutable ground to grow that will. Using things like "no trans fat" or "less salt" or whatever is irrelevant. The discussion is about what things would look like if the demand for such calories fell of a cliff. How to drive change is what my previous comment was (unsuccessfully) aiming at: you have to be precise in what kind of changes in the food supply you are aiming at. Rob, you associated in an earlier comment highly processed with high calories. I certainly do have a idea what type of foods you have in mind, but e.g. diet or low cal versions of products typically require more processing, so that's why I was pushing for more precise labels - Paul van Eijck

I think as Heather seems to be that we have far pushed the envelope on refinde chem ingrediants. We assume an ingrediant won't kill us because it hasn't been provem to kill us. That hasn't worked out with many products such as trans fats. Can Corp live without those items? It seems so. Developement was for price not quality. Michaile Maurer, I have heard assumptions that it would take as much as 70% of cropland to produce enough fuel. With that said, I also dont completly believe that ethanol is the answer, there is several researches going on about Algea making oil, and converting pig manure directly into fuel. I think when we finnally figure out how to live in a world without oil while being an environmenatal steward (wow, could it happen??) we will all be surprised at how we did it! - Mike Haley
Lisa, how would "big" grain be different? well assuming that no more corn was processed (not all corn would be highly processed though) then corn producers would loose 10% of its market, not a huge offset considering we may be using more for fuel. With soybeans I am not sure, alot of the oil would probrably loose its demand, but these acres could easily be shifted to wheat, corn, oats, and other products. - Mike Haley

I am not in the biofuel camp. I think there are too many problems to overcome. Personally (remember, I'm an opinionated red head from Oregon so...) So, to answer the question, if processed food went away, new jobs replacing those need to go into profood type work. How to engineer that? Are we ready? Can we synchronize something that historically developed more organically (pun)? That is, can we create the basket to catch the fallout from the loss of processed foods, and thereby change "change"? - ZEBRAFINCH

hey, thanks for the RT out there on Twitter. I said this originally thinking how it amazes me that people are conditioned to be afraid of raw foods; eggs, milk, kombucha (I recently saw an article saying "don't drink kombucha - it's RAW" (crazy because of course it's raw).
